These little creamy treats are packed with healthy fats.  Avocados contain good amounts of vitamin K, folate, vitamin C and E and some B vitamins. In combination with cacao (aka the happy hormone fairy dust…) these popsicles are an awesome boost whenever you need a little pick-me-up. Because they don’t drip it makes them a super convenient ice cream treat for kids as well.

Ingredients ( 4 popsicles)

  • 2 ripe avocados
  • 2 tbsp honey / maple syrup
  • vanilla pod (or ¼ tsp vanilla extract)
  • 3 tbsp coconut oil
  • ½ tbsp cacao powder
  • 2 tsp coconut sugar
  • stevia

Blend up the avocados with the vanilla and honey in a blender or food processor.

Fill the cups and tap them on the counter until the air bubbles disappear. Insert the sticks and put them in the freezer for at least 3 hours.

To make the chocolate coating you can most definitely melt some dark chocolate in a double boiler. But for this refined sugar free version you can melt the coconut oil and stir in the cacao powder, coconut sugar and stevia. I prefer not to use only stevia because that doesn’t benefit the flavor.

When the avocado popsicles are frozen properly they are ready to be dipped in chocolate. The coating will solidify straight away.  The popsicles can be stored in the freezer on a piece of parchment paper.
